  • 1 15-oz can black beans drained and rinsed
  • 1 cup fresh strawberries
  • 1/2 cup whole-wheat flour
  • 3/4 cup cocoa powder I used about ½ regular and ¼ Dutch cocoa to make my brownies really dark
  • 1/3 cup chocolate chips or chunks melted
  • 2/3 cup sugar
  • 2 tbsp coconut or avocado oil
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt
  1. Put both the beans and the strawberries in your food processor and puree until very smooth. To make the preparation speedier and easier add the eggs, oil, melted chocolate and the vanilla extract to the mixture in the processor and pulse a few times until all is incorporated (you don’t have to beat the eggs separately: unlike for a cake, you don’t want your brownies to rise, and it’s beating the eggs that helps a dough rise.)
  2. In a separate bowl mix the flour, cocoa powder, sugar, salt and baking powder.
  3. Add the wet mixture to the dry mixture. Stir until incorporated.
  4. Bake for about 20-30 minutes depending on the thickness of your brownies (it’s about 15 minutes of baking tie per 1 inch of dough, so if your dough is about 2 inches thick, then give it about 30 minutes to bake through)
  5. Sprinkle with some freeze-dried strawberries to add a punch of color.
  6. Cut the brownies and enjoy!
