Healthy Pumpkin Cookies are all-natural, healthy, high in protein (no protein powders!), so easy and quick to make and so sweet and satisfying!
Preheat the oven to 350 F. Line a cookie sheet with parchment paper.
In a bowl mix together pumpkin, oil, egg white, vanilla and sugar.
Whisk together the flour, baking powder and pumpkin spice.
Add the dry mixture to the wet mixture and mix well.
WIth a cookie scoop or a tablespoon scoop out the cookie to the sheets and bake for 10-15 minutes or until golden brown.
