For the Banana Cake Layer:
  • 1/2 cup white whole wheat flour
  • 1/3 cup fructose sugar
  • 5 egg whites
  • 2/3 cup ripe banana 1 large or 2 small bananas
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
For the Cheesecake Filling Layer:
  • 8 oz fat-free farmer's cheese or ricotta cheese
  • 1/3 cup fructose sugar
  • 1/2 tsp vanilla extract
  • 3 oz low-fat cream cheese
  • 2 egg whites
  1. Preheat oven to 375 degrees. Grease a 15x10 inch jelly-roll pan with some oil. Line with parchment paper; set aside. 

  2. First make the filling: In a small bowl, combine farmer's cheese, cream cheese and sugar. Beat with an electric mixer until smooth. Add the egg whites and vanilla and beat until combined. Spread in the prepared pan; set aside.  

  3. To make the cake: In a small bowl stir together the flour, baking powder and baking soda. 

  4. In a large bowl beat the egg whites on medium until soft peaks fork. Gradually add the sugar, beating on high speed until stiff peaks form. Gently fold the mashed banana and the vanilla extract into beaten egg whites. Gradually sprinkle the flour mixture over egg mixture and fold in just until blended. 

  5. Carefully spread the cake batter evenly over the filling in the pan. Bake for 20 minutes or until the top springs back when lightly touched.

  6. Immediately loosen cake from the sides of the baking pan, sprinkle with the powdered sugar and cover with a clean kitchen towel. Place a wire rack on the top of the cake. Carefully pick up the pan, while holding the rack and flip over. 

  7. Your cake is now be on top of the towel on the cooling rack. Carefully peel off parchment paper. Starting with the short side, roll up cake as tightly as possible (don't roll up the towel with it). Allow to cool completely on wire rack. 

  8. Sprinkle with some confectioner's sugar if desired and serve. Wrap any leftover cake in plastic wrap and store in the refrigerator for 3-5 days. Enjoy!
