In between of Summer Holidays (Happy Independence Day, friends!), outdoor fun & travels, baking anything even remotely complicated sounds a bit… unsurmountable! Oh, and if that’s not enough, the summer heat can make anyone feel as lazy as a kuala bear! (It does so to me!) 🙂 This is why I HAD to come up with an easy treat recipe, such as this Easiest Healthy Chocolate Cupcakes Recipe that you can make literally – in minutes!…Yet… don’t they look impressively good? 🙂

Dressing up and having a reason to actually do my makeup, meeting a few people and of course – sharing my latest treat with them!
Events like these always set me up with good mood for a long time afterwards!
So for our upcoming Independence Day backyard party I’m super-excited about making these Healthy Cupcakes that I’ll be feeding my family and guests with! …And hopefully getting some much-needed compliments to make my day even brighter! 🙂
HOW TO MAKE THE EASIEST HEALTHY CHOCOLATE CUPCAKES
So, what makes The Easiest Healthy Chocolate Cupcakes so easy to make?
The dough is a one-bowl recipe! Similar to the Chocolate Chip Cupcakes, these are made with greek yogurt to make them super-moist! But to make this recipe fast and easy I bypassed the chocolate chips and instead of the regular whole wheat flour and baking powder combination I used the pastry flour which already has the rising agent in it!
Note: you if it’s easier for you to use the regular flour instead of having to shop for the pasty flour – you can still use it + the baking powder! (I’ve added the instructions and the proper amounts for each in the recipe). The bottom line here, though, is… Whatever is easy – just go with it! 🙂 Finally, for the frosting I used the Easiest Healthy Chocolate Frosting in the world! Some Greek yogurt, some cocoa powder and a bit of sweetener is basically all you need to whip it all up!
Et viola! The ultimate party treat is done and ready to go! (Leaving you enough time to pretty up and have a nice cup of tea to make you feel good and fresh before the party begins!)
THE EASIEST HEALTHY CHOCOLATE CUPCAKES!
The Easiest Healthy Chocolate Cupcakes are low-calorie, all-natural, yummy and delicious! They're perfect to treat yourself, bring to a party or to impress your family with a healthy dessert!
For the Cupcakes:
- 3/4 cup pastry flour see notes for using regular flour
- 1/2 cup fructose sugar
- 1 cup fat-free Greek yogurt
- 4 egg whites
- 1 tsp vanilla extract
For the Frosting:
- 2 cups fat-free Greek yogurt
- 1/2 cup cocoa powder
- 1/2-2/3 cup sugar
In a mixing bowl, combine the flour, cocoa poweder and sugar.
Combine the egg whites, vanilla extract and yogurt and beat until fully and incorporated.
Combine the dry and the wet mixtures. Mix together until incorporated.
Pour batter into the cupcakes moulds and bake at 350 F for 15-20 minutes, or until a toothpick comes out clean. Let cool completely.
To make the frosting mix together the yogurt with the sugar and cocoa powder. Whip until fluffy.
Pipe the frosting on top of the cupcakes and sprinkle with some chocolate chips. Enjoy!
*If using regular flour, use the same amount of flour and add 1/2 tsp of baking soda to it. Whisk together to incorporate.
