Only… just the amount of time that’ll fill you up with JOY! But if the messy & lengthy baking process sounds overwhelming or stressful to you – it’s also important to either find another way to satisfy your cravings (like getting a healthy store-bought treat)…Or find another recipe! An easy recipe, that won’t take away the joy by stressing you out about the amount of work that needs to be done!
Because I am one of those people who loves to bake (and eat, and share) my healthy desserts… But DOESN’T always like the idea of spending 2 hours in the kitchen baking and then cleaning up…
I’m always on the lookout for the treats as easy to create as possible!
And that’s exactly how this Easiest Healthy Banana Bread recipe was born!
THE SECRET INGREDIENT
Alright! The Secret Ingredient is…
ICE CREAM!
Oh, yes! Could you have guessed it? 🙂
Well… to be honest, I didn’t invent using ice-cream for baking! After scrolling a bit through Pinterest (one of my favourite late-night indulgences) 🙂 looking for an easy quick bread recipe, I’ve bumped into a few the Ice-Cream Quick Bread recipes!
Reading through these recipes made me want to thank the genius who came up with the brilliant idea and to also find a way to healthy-fy them!
(Because they were all made with the classic full-fat and sugar type ice cream!)
And here’s what I’ve done:
Well, first, I thought about using a different, healthy ice cream. But at the same time a healthy ice-cream may mean less sugar and fat. And I wanted my outcome to also TASTE good!
This is why I just knew that I couldn’t use any healthy ice-cream (If you’re curious about the best healthy ice-creams of all kinds, sorts, calorie counts, etc., I’ve covered all of them in this Best Healthy Ice-Creams Guide!).
For instance, I wouldn’t recommend using a super-skinny, mild-tasting ice-cream such as 100-calories per pint Wink Frozen desserts. It takes a bit of time to start loving an ultra-low-calorie ice-cream like that after having been on the Ben&Jerry’s diet! And if you use it to bake – the result will just end up being well… “mildly” tasteless! 🙂
So, here’re the ice-creams that I recommend using for this recipe:
- Halo Top, Enlightened or any other higher-fat, but lower sugar ice-cream. The Halo Top pint was exactly what I used to make this Banana Bread!
- Arctic Zero (it’s vegan and low-fat, but it’s sugar content and whipped creamy texture it should work as well)
And here’re the ice-creams that I don’t recommend:
- Cabo Avocado, Frill, or any other plant-based, single ingredient ice cream
- Wink or any other mild-tasting super-low calorie type ice cream
Finally, to make the Ice-Cream bread even healthier, I also added the fruit (bananas in this instant) to the ingredient list! (Because what can really be healthier than an all-natural ingredient after all?)
SO: even if you are going to use the “real” full-fat & sugar ice-cream (because you don’t like sugar-substitutes even healthy ones like Stevia in Halo Top), having all that fruit in this healthy banana bread ensures the lower calorie count and the wholesomeness of your treat!So what do you think of making the easiest EVER healthy banana bread? The Easiest Ever Healthy Banana Bread!
The Easiest Ever Healthy Banana Bread Recipe that takes only 5 minutes to mix up, it's all-natural, whole grain, low-sugar and low-fat, yet it's also indulgent and extra-delicious!
Ingredients
- 2 large mashed bananas or 3 small bananas
- 1 pint healthy* ice-cream or regular ice-cream *see notes which healthy ice creams to use
- 1 1/2 cup white whole pastry wheat flour **see note if using regular flour
Instructions
Preheat oven to 350F. Spray a loaf pan with cooking spray, or line it with parchment. Set aside.
Stir bananas and ice cream together. Add the flour. Stir until dry ingredients are completely incorporated.
Pour dough into prepared pan, and bake in preheated oven for 60 min. Bread is done when a toothpick inserted into center comes out clean.

*I used 1 pint of Halo Top vanilla ice-cream.

**If you're using pastry flour - you're all set. If you're using regular flour - you will want to add 1/2 tsp baking powder and 1/4 tsp of salt to ensure that the loaf rises properly.
