Hi, Sweet Friend,
Do you remember me bragging about my new super-healthy, super-pretty, and oh-so-great find in the wide world of healthy grains? Yes, it was the Mighty MILLET!
And indeed these Healthy Banana Millet Brownies came out so extra-yummy that I had to make another batch just for my mom to take home with her!
And although I basically grew up eating a lot of millet (in the Eastern-European culture millet is very popular… One of the most-loved dishes is a millet pudding for breakfast), I’ve kind of forgotten about it. I think that it’s because quinoa has been all the buzz over the last few years… Or perhaps it’s because millet isn’t as popular here in the US. Well, at least not yet…
But I did rediscover my millet as I was looking for some healthy-recipe inspiration on Pinterest (which is a very fun, calming and pleasant activity… I highly recommend it for anyone who is in urgent need to unwind 🙂 because it ALWAYS works wonders on me!)And so when I’ve stumbled upon some Eastern-European recipes, a sudden thought, an idea struck me: why don’t I try using millet again?! And I knew that it should make a great addition to my dessert ingredients list since millet – a grain, that looks very similar to quinoa isn’t just a very pretty-looking grain (it’s bright-yellow)… Also unlike the quinoa that may be a little plain to eat by itself, just cooked in the water, the cooked millet is much softer and sweeter and is yummy enough to eat just as is, out of the pot.)
And so, since my Healthy Millet Brownies have become such a great hit in my family (and I hope you liked them, too 🙂 ) I’ve decided that I should definitely start thinking about more sweet beautiful things made using millet!And because I’ve got a Terrible-Horrible Banana Overload (again!) happening in my kitchen 🙂 I decided to make something really special with these sweet-wellow bananas. And since I wasn’t very much in the mood for the dark chocolate this time… I wanted to make something different…But at the same time it had to be decadently-different… 🙂I’ve decided to make The Healthy, Luscious, White Chocolate Banana Blondies!
And what could possibly be the best thing to add to my blondies to enhance the beautifully yellow bananas? Yes, I knew right away that the millet will compliment the bananas’ flavor, add to their silky-buttery texture and make the bananas’ sunny-yellow tones really shine in these beautiful healthy blondies!And you know what?These beauties came out even better than I thought they would (it was my first time making them!)!
So smooth, so sweet, so soft, so buttery!…Complimented with the luxury white chocolate that I melted and mixed in the dough, they turned out to be yet another great success, even with my (sometimes fussy) beautiful children!
Healthy White Chocolate Banana Blondies
- 1 cup cooked millet
- 3 small bananas (or 2 large bananas)
- 2 eggs
- 1/2 cup garbanzo bean flour
- 1/4 cup almond flour
- 1/2 cup cane sugar
- 1/4 cup coconut or grape-seed oil
- 3 oz white chocolate
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 pinch salt
- Preheat the oven to 350F.
- Put the millet, bananas, eggs, oil, sugar, baking powder and salt in a blender. Blend everything thoroughly until the mixture is super-smooth.
- Add the flours to the blender and blend for a few more minutes until incorporated.
- Melt the white chocolate. Pour it into the blender and blend for a few more minutes to incorporate the chocolate in as well.
- Pour the dough into a greased 8X8 brownie pan and bake for about 40 minutes. In 40 minutes check the blondies for doneness. Mine were still a little bit wet inside and I like my blondies to be thoroughly cooked so I baked them for an extra 10 minutes. If you like your blondies to be on a softer side - take them out, let them cool a little and... dig in!!!
