A recipe for the Healthy Strawberry Brownies: a high in protein, low sugar and low-fat, super-gooey and full of flavor all-natural dessert!

“Why everything that’s tasty isn’t healthy and why everything that’s healthy tastes so bad?!” – this was a 5-year old me whining to my grandma who yet again chopped some healthy greens for me, topped them with the healthy olive oil and told me to eat a bowl of it because “…Because this is healthy”.
Looking back at it… my dear grandma knew how important it was to raise a HEALTHY child (I can’t stop thanking her for that now that I’m a grownup!), but she never thought that it was worth to waste our precious time on elaborative cooking when there are so many books to read and so many things to learn from them!
Well, my grandma certainly installed many good things in me including the love for reading and the deeper understanding of importance of being healthy. But I’ve come to realize that there is one thing that I must disagree with her on: I believe that it IS worth spending some time to whip a healthy, yet tasty stuff! Why? Because unlike my grandma who also didn’t see any importance in ENJOYING life, I believe that the enjoying part is just as if not more important for our health than the healthy greens since it contributes to our emotional health which in turn affects our overall wellbeing (Well, I am not telling you that it’s OK to eat potato chips instead, though!)
Finally, before I get to the recipe, I just want to make my point here: I honestly believe that you CAN have the best of both worlds
…And so I’d rather not eat dessert that taste like a cardboard (because than I feel deprived once again, just like when I was 5 year-old).
But than I’ve discovered what using beans in my desserts does, and that was one of those big “Eureka!” moments for me.
I’ve tried a few healthy bean brownie recipes that I’ve found on the web, but I had to admit that those that involved mostly just the beans and then some sugar, chocolate and fat, although still healthier and lower in calories than the classic fatty and sugary brownies. But then I’ve realized that adding some fruit to the concoction not only lightens the dough up making it moister and gooier. The fruit also enhances the brownies’ taste with its fresh texture and aroma.
So, here is yet another recipe featuring strawberries and the healthy-gooey black beans:
Healthy, High-Protein, Low-Fat Strawberry Brownies
- 1 15-oz can black beans drained and rinsed
- 1 cup fresh strawberries
- 1/2 cup whole-wheat flour
- 3/4 cup cocoa powder I used about ½ regular and ¼ Dutch cocoa to make my brownies really dark
- 1/3 cup chocolate chips or chunks melted
- 2/3 cup sugar
- 2 tbsp coconut or avocado oil
- 2 eggs
- 1 tbsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- Put both the beans and the strawberries in your food processor and puree until very smooth. To make the preparation speedier and easier add the eggs, oil, melted chocolate and the vanilla extract to the mixture in the processor and pulse a few times until all is incorporated (you don’t have to beat the eggs separately: unlike for a cake, you don’t want your brownies to rise, and it’s beating the eggs that helps a dough rise.)
- In a separate bowl mix the flour, cocoa powder, sugar, salt and baking powder.
- Add the wet mixture to the dry mixture. Stir until incorporated.
- Bake for about 20-30 minutes depending on the thickness of your brownies (it’s about 15 minutes of baking tie per 1 inch of dough, so if your dough is about 2 inches thick, then give it about 30 minutes to bake through)
- Sprinkle with some freeze-dried strawberries to add a punch of color.
- Cut the brownies and enjoy!
