THE HEALTHY BLUEBERRY CUPCAKES RECIPE!
…I know you guessed it right! 🙂But seriously though, a small treat like these yummy & healthy Blueberry Cupcakes can make such a big difference to how your day goes…
And as for the cupcakes – I won’t talk too much about how they are made (because… well, you’ll find it in the recipe!). But I do want to add one little note:
A Quick Tip:
If only want to make just one cupcake for yourself, just to fix your blues like… asap…
Just divide the recipe by 10 and make a Healthy Blueberry Mug-cake (it’ll look similar to this Healthy Strawberry Mug-cake, and you can frost it with the super-easy to make frosting from the recipe, if you’d like!)
Or (this is what I like to do): just mix the fat-free greek yogurt with some stevia or sugar and smear some on top of your cake!

In a mixing bowl, combine the flour, sugar and baking powder.
Combine the egg whites, vanilla extract and yogurt and mix until fully incorporated.
Combine the dry and the wet mixtures. Mix together until incorporated. Fold in the blueberries.
Pour batter into the cupcakes moulds and bake at 350 F for 15-20 minutes, or until a toothpick comes out clean.
To make the frosting whip together the yogurt and the True Whip until fluffy.
Pipe the frosting on top of the cupcakes and decorate with a few extra blueberries
*I usually look for the healthier variation of the "Cool Whip": the "True Whip" which is all-natural.
