How is your summer going? Is it really hot where you are? Uh, this summer’s heat! It’s been making me so lazy and tired! …And my two boys are on their summer break and… I’m always SUPER busy and at times downright EXHAUSTED! But… aside from the heat and the exhaustion a summer also brings LOTS and LOTS of freshly picked produce! All sorts of veggies, fruit and berries are now available and I just LOVE-LOVE-LOVE going from one to another exploring their tastes!
But I’ve written it so many times that I guess you already what I’m always guilty of: I always tend to buy TOO MUCH of the good stuff! Yes, my bad, I know! But how can you possibly resist all those fresh sweet blueberries AND those huge dark-red juicy cherries, AND those sweet-smelling strawberries, AND… the list is almost endless!
But what’s my favorite answer to any need-to-use-it-all-up problem? It’s a super-yummy dessert, what else can it be?! And since with all this heat and days filled with activities I haven’t been feeling much up to making anything even relatively time-consuming, a perfect answer to these both problems would be… a Blender Dessert!
I used up all the excess berries in my kitchen…
AND I had some oats that I cooked this morning. But no one was hungry enough to eat that much oats and I ended up with a cupful of them. Not only I use them up too for a good cause. They contributed to such gooey texture and such delicious, slightly nutty flavor of my brownies! Now I’m thinking that I’ll have to make more oatmeal-based brownies sometime since the cooked oats make WONDERFUL brownies!!!!!)
And on top of it all making these beauties took me 15 minutes the most (basically it was just rinsing the berries and measuring all the ingredients before throwing them all in the blender)! Considering the fact that I decided to make them late at night when everyone was finally sleeping and I was really exhausted, I was very happy with the little hustle that all the cooking took out of me. And then I was REALLY impressed with the result as I tasted these yummies next morning!
Healthy Summer Berry Brownies
- 1 can black beans drained and rinsed
- 1 cup cooked oats
- 1 cup cocoa powder
- 1 cup brown sugar*
- 1 cup mixed berries*
- 2 eggs
- 1/4 cup oil
- 1 tsp baking powder
- 1 tbsp vanilla extract
- 1 pinch salt
Preheat the oven to 350F.
Put all the ingredients in the blender and blend until everything is super-smooth and incorporated.
Pour the mass from the blender into a brownie baking pan and bake for about 1 hour. The brownies will be very gooey, but if you want them to be really soft and almost puddingy bake for about 45-50 minutes, and if you want them to be thicker and really solid, bake an extra 5-10 minutes.

*I used all the getting-old berries I had in my fridge: pitted cherries, blueberries and a couple of strawberries, a total of 1 cup of berries. You can also use stone fruit, apples, grapes and any other fruit for this recipe.
