Spring is just around the corner, but the Winter’s cool winds and greyness is still behind our windows! Is it the weather or the passing of the recent Valentine’s Day celebrations that made me feel like my soul needed… a little something to brighten up my day? As usually, making (and eating!) these Healthy Banana Yogurt Cupcakes did most of the cheering up work for me! Trying on a few warm-weather outfits such as this pretty pink top-animal print skirt one did the rest! 🙂
THE HEALTHY BANANA YOGURT CUPCAKES
…And yes, these Healthy Banana Yogurt Cupcakes were certainly capable of keeping my spirits up for as long as they last in the fridge!
Low in calories; high in protein and other nutritional goodness – you can even eat them for breakfast to start your day off right! And if this is what you’re thinking about – I’m all in it with you! (You probably already know how much I love a dessert for breakfast, don’t you?)
Set them up in a pretty plate;
Add a few healthy fruit options to the equation;
And enjoy them with your favourite tea or coffee! 🙂But what if you’re pressed in time in the morning and your only breakfast options are the ones you’ve gotta get from Starbucks (or Whole Foods, or Coffee Bean… well – you’re getting my point)?!When I don’t have time for a relaxed kind of a breakfast I always make sure to make the best out of my snack-time!
And here’s how to have a perfect snack:
- Set these pretty Healthy Banana Yogurt Cupcakes on a pretty tray.
- Put some pretty flowers next to them.
- Grab a pretty cup and fill it with some soothing tea – and have a blissful moment!

So… as far as this pink top & leopard skirt outfit goes… It looks somewhat summery, doesn’t it? 🙂
Well… I put it on to take these photos and paired it with the summery sandals on purpose! Which was… getting you out of the grey-ish wintery mode and setting your mind up for the warmer brighter weather!
Planning out the warm-weather outfits instantly made my day feel brighter! And… like I said – add a sweet treat and a pretty bouquet of pink flowers to it – and… your good mood is set for the day!So what do you say?

Healthy Banana Yogurt Cupcakes
A Recipe for the Healthy Banana Yogurt Cupcakes that are low-calorie, all-natural, good-for-you and super-yummy!
For the Cupcakes:
- 1 1/3 cup flour of choice I use white whole wheat
- 2/3 cup fructose sugar or 3/4 cup regular sugar
- 4 egg whites
- 1 large banana, mashed or 2 small bananas
- 1/3 cup fat-free Greek yogurt
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
For the Frosting:
- 2 cups fat-free Greek yogurt
- 1 cup fat-free True Whip* thawed out
In a mixing bowl, combine the flour, sugar, cinnamon and baking powder.
Combine the egg whites, mashed banana, vanilla extract and yogurt and mix until fully incorporated.
Pour batter into the cupcakes moulds and bake at 350 F for 15-20 minutes, or until a toothpick comes out clean.
To make the frosting whip together the yogurt and the True Whip until fluffy.
Pipe the frosting on top of the cupcakes and sprinkle with some more cinnamon.
*I usually look for the healthier variation of the "Cool Whip": the "True Whip" which is all-natural.
